Reuben pizza w/ Kimchi thousand island dressing

What’s not to love with this one…. Reubens, delicious. Pizza, also delicious. Stands to reason a Reuben pizza is going to be a winner.

The great thing is you can cheat with pre-made pizza base if you’re short on time.

The shopping list

  • Ready made pizza bases

  • Tomato sauce for the pizza base

  • Pastrami

  • Edible Alchemy Classic Sauerkraut

  • Swiss cheese

  • Mozzarella cheese

  • Kimchi Thousand island dressing (from previous blog post)

This pizza really benefits from the kimchi thousand island dressing we made last time. It is super quick to whip up and if you want to stay true to the Reuben flavour profile you’ll need it.

Before we go any further let’s make sure we’re all on the same page about the type of pizza we’re making, thin base, wood fire style. More toppings does not equal more delicious, if you have so much on the pizza that the base is soggy you have made a mistake. That’s what delicious deep dish pizzas are for.

Ok let’s put this pizza together

Pre heat your oven to 220oC

Get your pre-made base out and on a tray,

Place a tomato base on the pizza

Add a small layer of the grated cheeses (so everything sticks)

Place a layer of slices of pastrami

Place a layer of sauerkraut (really squeeze it out before you put it on the pizza)

Place a layer of cheeses.

Season with salt and pepper

Bake for 10-15min or until melty gooey delicious.

Remove from oven

Slice and drizzle with Kimchi thousand island dressing.
