When will X product be available?

We always want our products to be seasonally appropriate, so if an ingredient is unavailable you may have to wait until next year. That means if you find something you really like you may want to stock up!

We also love to experiment so there will be one offs that aren't repeated. If there is enough demand we could bring back an old favorite.

Why is my product fizzy?

The fizz is produced by microorganisms during fermentation, consuming sugar and creating C02. Most of this happens in the first 30 days before it is packaged, but it will continue, slowly, for some time afterwards. When under pressure the C02 builds up and makes bubbles which are released when you open the jar.  This is totally fine and shows that the product is still ALIVE! However, too much pressure can make a mess when opening so keep the product refrigerated to slow the fermentation.

What is Lacto-Magic?

Lacto-magic is what we like to call Lacto-fermentation.

Lacto-Fermentation is a specific type of fermentation that uses lactic-acid-producing bacteria to preserve food. Lactic acid is produced upon the breakdown of sugar in an oxygen-free environment. Lactic-acid-producing bacteria (lactobacillus) break down the sugars in food to form lactic acid. Producing deliciously funky products.

Are fermented foods good for you?

Short answer: Yes!

Long answer: There is an almost endless supply of anecdotal evidence in support of probiotics and fermented foods and a solid amount of science to back it up. We are neither doctors nor scientists so we'll leave that up to them, but here is a link to a Journal that discusses some the benefits of probiotics: https://sfamjournals.onlinelibrary.wiley.com/doi/full/10.111/j.1365-2672.2006.02963.x

How long will a product last after opening?

As long as the product is kept refrigerated it will last open as long as the use by states. We also recommend using clean utensils when serving as contamination can alter the balance
