Summer garden rice bowl #1

The Summer harvest is upon us! Which means there’s not much time to go around with all the jobs that keep on popping up. But, it does mean that it’s time to feast on the bounty! Getting into the swing of being an early bird at the patch has led to a big lunch when I get home.

Today’s lunch was simple and delicious. What you’re going to need is;

  • Rice, whatever is your favourite (I always make extra for fried rice the next day)

  • Eggs, however many you want

  • Beans, sliced

  • Zucchini, sliced

  • Tomatoes, chopped

  • Garlic, sliced

  • Onion, sliced

  • Sesame oil

  • Lime juice

  • White wine

  • And of course

  • Edible Alchemy Habanero, Cherry, Cherry Hot Sauce

  • Edible Alchemy Classic Kimchi

First get your rice on, make sure you give it a good wash so it’s nice and fluffy instead of a glutinous glob.

Side note, my method to cooking rice is

  1. Wash well

  2. Cover with cold water. Place your pinky finger in the pot so it touches the rice, the water level should come to your first knuckle

  3. Cook on high with the lid on, As soon as the water boils turn the heat down to the lowest you can, even move to a smaller burner.

  4. When it smells like cooked rice and has those little holes where the bubbles were turn it off, let it sit while you finish cooking with the lid on

  5. Then give it a fluff and you’re good to go.

Ok so the rice is on

Put your pan on the heat, once the pan is hot add some veg oil, the garlic and fry off.

Add the sliced zucchini.

Once you’ve got some colour on the zucchini add the sliced beans.

The beans will change colour and become quite bright as they cook.

Add the desired amount of Edible Alchemy Habanero, Cherry, Cherry Hot Sauce, I did 2.5tbsp.

Toss through the veg.

Add a splash of white wine to deglaze and steam the beans slightly.

After a minute back on the heat and a good jiggle add the veg and rice to your bowl.

Now on the side cut up your tomato’s and slice an onion to make a salsa.

Add lime juice, sesame oil and salt and pepper to the tomatoes. I kept my salsa on the side but dealers choice.

Finish everything off with a fried egg and some Edible Alchemy Classic Kimchi

Such a perfect meal after some hard work in the garden, it’s light, fresh & fills you back up so you’re ready to go again.
